Bio

Guatemala Santo Tomas comes from the San Lucas Toliman area near Lake Atitlan. Operated by the Torrebiarte family, it is currently overseen by the third generation, Javier Torrebiarte. Educated in the US and London, Javier returned to Guatemala to manage the family farm which employs 125 full-time staff and up to 500 pickers during harvest season. Committed to continuous improvement, the Torrebiarte family has enhanced processing methods, implementing new sorting processes in the wet mill over the past three years. Additionally, they prioritize sustainability by harnessing hydroelectric power to minimize their carbon footprint.
