Bio
Sulawesi Toraja is produced in the central highlands of the South Sulawesi province, a geographic wonderland of humid rice paddies and thousand-foot rock walls. The iron-rich volcanic soil and high elevations contribute to the syrupy, heavy body that defines the region’s best crops. It is named in honor of the Torajan people, an indigenous group known for their traditional village lifestyle and distinctive boat-shaped Tongkonan houses.
This specific "Sapan Minanga" lot is a collection of the finest coffees from the market towns on the west (Sapan) and east (Minanga) slopes of the Sesean Mountains. It is sourced from smallholder farmers organized around the Toraja Coffee Growers Cooperative, who work alongside the NGO VECO to improve agricultural standards and infrastructure.
Our Sulawesi is Grade 1, meaning it is rigorously hand-sorted for quality control and bean consistency. The coffee undergoes the traditional Giling Basah (wet-hulled) process, where the parchment is removed while the beans still have a high moisture content, giving them a unique bluish hue.
Toraja grows Catimor, S-795, and Typica Arabica varieties and harvest from May to September.
