Bio
Guatemala's Huehuetenango region is one of the country's most distinctive coffee-growing areas. Unlike much of Guatemala's coffee country, Huehuetenango lies in one of the nation's rare non-volcanic regions. Its remote, mountainous terrain and high elevations create a unique environment for coffee, while the isolation of the region has helped preserve a tradition of small-scale, hands-on production.
Most farmers process their coffee right on the farm, carefully handling each harvest from cherry to parchment. Ripe coffee cherries are selectively hand-picked and depulped using small hand-powered or electric drum pulpers. The parchment is then allowed to ferment in buckets or bags before being thoroughly washed to remove the remaining mucilage.
The traditional processing methods are matched by a thoughtful approach to protecting the land. Water used during pulping and washing is naturally filtered through earthen systems before returning to the environment, preventing organic coffee residue from entering local waterways. The result is a coffee that reflects both the character of Huehuetenango's rugged landscape and the careful work of the small farmers who cultivate it.
